Rusty’s Butt Rub (in keeping with Fanny Friday)

Two or three weeks ago I got a package in the mail from one of my regular readers, and an email asking if I’d give his dry rub a try and give him my honest opinion.
Well, I would’ve loved to that very same day if the weather had cooperated but as it was I had to wait until it wasn’t raining or ass-biting cold.

A few days ago I had my chance so I went to the store and bought a nice pork loin, rubbed it down and fired up the smoker.
I threw on some hickory chips (I seem to have plenty of those) and slow cooked that nice piece of meat at just under 200 degrees until it was done.

Before I go any further I want to say that I’m not big on rubs or sauces or anything else on my meat. It seems like 90% of that stuff does nothing more than cover up the taste of the meat. But hey! I told the man I’d give it a shot.

Fucking delicious, man. I may have to rethink my position on rubs. It gave the meat a sweet flavor that you could taste momentarily when you take a bite and then the natural flavors kicked in, very much drawn out by the other spices. It caramelized nicely without scorching and sealed in the juices, giving me a very moist and tasty piece of meat.
But if I thought it was that good hot, you should’ve seen my expression when I went to the refrigerator later and made myself a nice pork sandwich. Oh dear God, it was outrageously good.

I can go on and on about how great the rub is but it’s one of those things that has to be experienced to be believed.

    I agree with you about most sweet sugary & tomato -based sauces just covering the taste of the meat . Been using dry rubs for awhile now. Sauce if any goes on the side. Generally mix my own, but may give this one a shot.

    I almost balked at the price but remembered I pay 45 bucks for three bottles of BBQ sauce shipped to my door from Arkansas. Special stuff for special occasions !
