      That is hollandaise sauce. It’s is the greatest of the French mother sauces. Melted butter, lemon juice, and egg beaten into a creamy consistency that goes well on just about everything.

      A steak covered with crab meat and hollandaise is called steak Oscar and is the best way to serve steak of all time.
